تناول البحث موضوع الزيوت والدهون باعتبارهما من المواد الأساسية ذات الأهمية الغذائية والاقتصادية، حيث تم التطرق إلى تعريف الزيوت لغة واصطلاحًا، مع بيان أنواع مصادرها الأساسية والثانوية كالزيتون والجوز واللوز والسمسم وغيرها من النباتات التي اعتمد عليها الإنسان في استخراج الزيوت واستعمالها، كما تم شرح مراحل استخراج الزيوت بداية من جني الثمار وجمعها، ثم عصرها بوسائل مختلفة، مرورًا بعملية التصفية والتنقية، وصولًا إلى طرق تخزينها والمحافظة عليها. وتناول البحث كذلك مفهوم الدهون ومصادرها وطرق استخراجها، مع إبراز مكانتها في الحياة اليومية. كما تم التطرق إلى استعمالات الزيوت الغذائية في إعداد بعض الأطعمة التقليدية كالرفيس والعصيدة والزلابية، إضافة إلى استعمالاتها التجميلية والطبية لما لها من فوائد متعددة، ولم يغفل البحث جانب الحسبة ودورها في مراقبة جودة الزيوت والدهون وتنظيم بيعها ومنع الغش فيها، فضلًا عن إبراز الأهمية الاقتصادية لهذه المواد ودورها في النشاط التجاري والمعيشي.

It discussed the definition of oils in both linguistic and technical terms, while also presenting their main and secondary sources, such as olives, walnuts, almonds, sesame, and other plants that humans have relied on for oil extraction and use.
It also explained the stages of oil extraction, starting from harvesting and collecting the fruits, then pressing them using various methods, followed by filtering and refining processes, and finally methods of storage and preservation. The study further examined the concept of fats, their sources, and extraction methods, highlighting their role in daily life.
In addition, it explored the uses of edible oils in the preparation of some traditional foods such as rfiss, asida, and zalabiya, as well as their cosmetic and medicinal applications due to their multiple benefits. The research also addressed the role of hisba in monitoring the quality of oils and fats, regulating their sale, and preventing fraud.
Finally, it highlighted the economic importance of these substances and their role in commercial activity and livelihoods.
